Cinco de Mayo

Our little Cinco de Mayo party was pretty fun! It consisted of: 

A mexican potluck. 

Margaritas. (They were virgin.. but that's ok :)


Pictionary.






A cat and mouse pinata game. 

(It was too cold outside for a regular pinata. Not sure why Stephanie wouldn't want to hang one in her living room... :)


And... kiddos running for candy!


Gabriella was just too cute! I could hold her all night.



  • 3 (11 ounce) cans whole kernel corn, drained
  • 2 cups shredded cheddar cheese
  • 1 (7 ounce) can diced green chilies
  • 2/3 cup green onion, chopped
  • 3/4 teaspoon ground cumin
  • 1/2 teaspoon black pepper
  • 3/4 cup mayonnaise
  • 1 (8 ounce) container sour cream

Directions:

  1. In a medium to large bowl, combine sour cream, mayonnaise, and cumin.
  2. Stir well.
  3. Add corn, cheese, chiles, black pepper, and onions to the sour cream mixture.
  4. Stir til all is combined.
  5. Cover and chill for 2 hours or overnight.
*I added a little cilantro, green pepper, fresh jalapeno, and garlic & onion powder.
